Week 19

Gained 2.4. I knew last week was too good to be true! LOL That's okay though, I haven't been eating my correct dosage of points and I only got one day in of exercising last week plus a few push-ups and crunches here or there..... Anyway here's to a new week!

Taco Ring...can't get enough... 1/8 = 7 points

Tonight's dish was a taco ring using the crescent rolls.... It's the new move (well actually it's a new/old move) ...so easy and delish! http://www.recipezaar.com/Taco-RingFrom-Pered-Chef-81160 I used 90/10 lean ground meat and drained it and rinsed it under hot water to remove the remaining grease and fat. I also used Sargento reduced 4 cheese mexican cheese. I topped with some fat free sour cream and a little bit of salsa! Yum! Enjoy!

Chicken and Broccolli Ring 1/8th ring 7 points

My friend found this awesome recipe and she made it and it looked so delish that I decided to make it too! I wanted to share it with all of you. She used light mayo, light cheese, reduced fat crescent rolls and skipped the almonds to cut down on calories and points. It turns out to make 16 pieces and 2 pieces is worth 7 points. Not bad at all! I also added onions to the recipe as well. I sauteed the chicken, peppers, garlic and onion(due to a good suggestion from my friend) beforehand then chopped it all up. It added lots of flavor! It was satisfying and filling and def. delish! I skipped the almonds as well. You could make a taco ring with taco meat and cheese, or a cheesesteak ring using chipped steak and cheese or a chicken cheesesteak ring using ground chicken and cheese (even add some hot sauce to spice it up!)

Chunky Checking In...

K...so it's been a few days since I've said hello...so here I am :) I've been so busy with wrapping up the end of the school year that I haven't been able to check in...so I'm back... I haven't been doing a good job with writing down my food at all either! I feel like a hypocrite b/c I'm trying to help my Mom get into WW and my bf get back into it, but I've been a slacker! It's funny, once I hit the 140 mark I kind of let myself go a little bit. I def. eat better then I ever did though so I am content with that for the moment. It's funny to me when I crave yogurt... that just seems weird to me but I am happy with it...if that makes sense! I am going to try to get to 135 during the summer and also focus on exercising at least 3 times a week. I think that seems like reasonable goals. It's tough to eat healthy when I'm down the shore or even at home during the day. I give many props to stay at home Mom's...b/c there is no way I co

No clue how...

I lost 5 pounds this week. I have no clue how. I almost fell over when the scale said 136.6. I actually re-weighed myself 3 times before I got in the shower and a 4th time when I got out of the shower and each time is said the same thing. So weird, I feel like I've been eating badly. Well not bad, but def. not strict. I think it has to do with being a girl and certain times of the month and all that jazz... but anyway here's to week 18 :) Oh a good luck note... I wanted to wish my bf best of luck on her WW journey that starts today! WW Works...

3 Fantastic WW accomplishments/stories: 1.) I just wanted to give a BIG shout out to my girlfriend who just started the WW plan last week and lost 5.2 pounds in her first week!! Way to go!! It's really so rewarding and motivating to see results so fast....I'm so proud of her! 2.) Another girlfriend of mine was under the 140 mark today!!! WOO HOO!! Great Job!! 3.) My Mom is starting today too and she began by measuring her cream for her coffee and already realized she was using more then a serving size :) I'm so proud of her for measuring! Great Job to all of my girls for all of their hard work!!! Yesterday's Food: 1/2 bagel 3.5 Cream cheese 2 Egg Casserole 2 Hash brown 3 Salad w/chicken 3 Lemon/Blueberry pound cake mini bite 3 Shrimp pasta 5 Salad 2 Skinny Cow Ice Cream Sand 2 Total: 25 Over: 5 Bonus left: no clue, probably none! 2 Point Fudge :)

My fudge lovin friend sent this to me last night! YUMMMMMMMMMOOOO!! Weight Watchers Fudge recipeMakes 48 servings Ingredients: 16 squares (2 packages) Baker’s semi-sweet baking chocolate 1 1/2 cups pecans or walnuts, chopped 2 teaspoons vanilla 1 (300 ml) can sweetened condensed milk Preparation 1. Spread the nuts on a cookie sheet and bake at 350° F (180° C) for about 10 minutes to toast. Let cool. 2. In a large microwaveable bowl, melt the chocolate with the milk on HIGH for about 2-3 minutes (or until the chocolate is melted). 3. Stir in the nuts and vanilla. Spread on a foil-lined 8 inch (20 cm) square pan. 4. Chill for about 2 hours (or until firm). Cut into squares. WW POINTS per serving: 2 Nutritional information per serving: 93 calories, 6g fat, 0.9g fiber

This weekend I went to the beach with my BF, her 2 daughters, her sister and her sister's friend...and we had a great time!! The weather was crappy for the first 2 days so we hung in, rented "He's just not that into you", which was really cute by the way, ate, snoozed,entertained the kiddos, facebooked, googled, emailed and then ate again....it was very relaxing but we were SO ready to see the sun!! When the sun finally came out you kind of forget that it was just raining for the past 48 hours. So we decided to take a walk down to the beach and play at the park that is pretty much on the beach. It was fun! After that we came back home and decided to put the baby pool on the deck and hang out there. It's tough to sit on the beach or sit anywhere actually with a 2 yr. old and a 2 week old, but we did a pretty good job! We hung on the deck for a little bit and then made tacos for dinner. After dinner, we got ice cream, watched some tv and went to bed! Sunday morning

Okay so yesterday was def. a better day food wise! I still had some snacks and was over my 20 points but no where near the 30 points that I've been over lately :) I also wanted to share the pasta that I use nowadays. Off the beaten path....

Okay...so for the past 3 weeks or so I have NOT been doing a good job counting, weighing and watching my points and food intake nor have I been exercising! I am starting to feel the results of that.... So the only thing that I can do about it is...start over :) I am going to start fresh today and try to count and behave like I was in the past :) I am also going to encorporate some sort of daily exercise into my life, even if it's just walking the dog! I would still like to lose about 10 more pounds and then I will be done :) However, at the rate that I am eating...I will never lose those last 10! I'm going to go back to week one of my blog and re-read to see how I did when I was doing so well! HG's Magical Low-Calorie Margarita (Entire recipe: 115 calories, 0g fat, 55mg sodium, 2g carbs, 0g fiber, <0.5g protein =" 2"> Ingredients: 3/4 cup Sierra Mist Free (or Diet Sprite Zero, or your other fave no-cal lemon-lime soda) *1.5 oz. tequila 1 packet (two 5-calorie servings) sugar-free powdered drink mix, lemonade (like the one by Crystal Light) 2 tbsp. lime juice Optional: lime slice for garnish and salt or no-calorie sweetener for rim of glass Directions: If desired, run some lime juice along the rim of the glass and dip into a dish of salt or sweetener.
